A proud Hawaiian native, Choy spent his early career in renowned kitchens across New York City before returning to help popularize regional cuisine—especially poke, made from raw marinated fish inspired by traditional Hawaiian methods of enjoying fresh catches with sea salt and seaweed.

Old Koloa Town

Only half a mile southeast of the resort is Poipu Shopping Village, known for its award-winning restaurants and distinctive shops, art galleries, and boutiques. The Village also offers a free, authentic Hula show with live Hawaiian music every Monday and Thursday afternoon.
