Meet Executive Chef Sam Choy

Known as the “Godfather of Poke” and a leading figure in Pacific Rim cuisine, our James Beard award-winning Executive Chef Sam Choy brings deep expertise in island flavors. A proud Hawaiian native, Choy spent his early career in renowned kitchens across New York City before returning to help popularize regional cuisine—especially poke, made from raw marinated fish inspired by traditional Hawaiian methods of enjoying fresh catches with sea salt and seaweed.

Old Koloa Town
